Made by selected grapes of Cabernet Sauvignon and Canaiolo Toscano. Cornacchino is the name of our oldest vineyards, 80 years old. Wine: Indicazione Geografica Tipica I.G.T. Production Area: Montemorli area. Vineyards: ancient vineyards of “Cornacchino”, oldest vines, 60 years old. Vines: Cabernet Sauvignon 90%, Canaiolo 10%. Density: 4.000 vines per hectare. Cultivation System: Guyot with grassing and minimum tillage. Soil: fresh and fertil soil with a little stones. Altitude: 210 mt. over the sea level. Microclimate: sub - mediterranean with quiet cold - rainy winter and dry - medium hot summer. Production per hectare:: 40 Hl. Vinification: scrupoulos hand harvest in small boxes, fermentation and maceration on skins for 18 - 20 days with temperature controlled ( 26 ° C). Malolactic fermentation in tonneau ( french wood cask of 5 hl.), aging for 12 months and stay 6 months in bottle. ORGANOLEPTIC CHARACTERISTICS: Colour: intense ruby red Fragrance: complex, note of spicy and liquorice. Taste: powerful, excellent structure, good acidity. Alcohol: 13,50% Vol. Service temperature: 10 - 20 ° C. Combinations: red meat, wild boar, tagliatelle, ribollita.
